  • 1 1/2 cups almond flour

  • 1/2 cup sugar

  • 1 teaspoon backing powder

  • 1/2 teaspoon salt

  • 2 large eggs

  • 1/2 cup orange juice

  • 1/4 cup olive oil

  • 1/8 cup unsalted butter

  • 1 teaspoon vanilla extract

  • 1 cup fresh cranberries


Step 1

Preheat your oven to 350 degrees F and grease a cake pan

Step 2

In a bowl, combine almond flour, sugar, baking powder and salt

Step 3

In a separate bowl, whisk together eggs, orange juice, olive oil, butter and vanilla

Gradually add the wet ingredients to the dry ingredients and mix until well combined
