Ingredients
1 cup quinoa, rinsed and cooked
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, finely chopped
1/4 cup Kalamata olives, pitted and sliced
1/4 cup fresh parsley, chopped
1/4 cup Feta cheese, crumbled (skip the dairy free)
2 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
Salt and Pepper to taste
Preparation
In a large bowl, combine quinoa, tomatoes, cucumber, red onion, olives and parsley
In a separate small bowl, whisk together the olive oil and lemon juice to create the dressing
